2007 Vidal Ice Wine
Our first ever,100% Nova Scotia Ice Wine was produced from grapes picked on a cold winter night, during the wee hours of the morning while temperatures hovered around -12 Celsius.
Ideal picking conditions resulted in a wonderful aromatic sweet white wine with balanced acidity.
Serve chilled as an aperitif or with desserts such as dark chocolate mousse. Only 612 bottles of our 2007 Vidal Ice Wine were produced. |
Estate Baco Noir
Our Estate Baco Noir, was carefully matured in small French and American oak barrels and shows an intense nose of sweet, dark berry fruits mingled with cedar vanilla oak spice. The palate is rich and complex with flavours of blueberry, black cherry and anise. Drinking well now, but will continue to age for 2 to 5 years. |
Estate Chardonnay
Our Estate Chardonnay was fermented in small American oak barrels to produce mouth filling, smooth and balanced flavours with oak integrated into its cool climate fruit aromas. Malolactic fermentation further softened this dry wine’s natural acidity to make it an ideal pairing with Nova Scotia seafood dishes such as lobster, scallops in creamy sauces, and salmon
|
Estate L’Acadie Blanc
Aromas of pineapple and green apples followed by a crisp, lively, acidity. This dry wine is ideal to compliment chicken and turkey dishes and ones with cream sauces such as lobster bisque. Winner of a Silver Medal at the All Canadian Wine Championships, vintages 2004 & 2007
